OMG! Your sister is hilarious(it runs in the family). Why doesn't Carol have a blog? The pumpkin roll makes my mouth water. Happy New Year Mary Ann. Will you go out and howl at the Blue Moon? I'll be sewing journal pages by moonlight.

Any chance of Carol sending us her pumpkin roll recipe? I have TONS of pumpkin in my freezer, taking up space and staring at me accusingly when I open the lid.

That is the best holiday card EVER and really sets my mind at ease for tossing my own soggy pile of cards into the snow. Thanks, Mary Ann, and a wonderful and Happy New Year to you, the cat posse and your sis!

Pumpkin Roll


Cake:


3 eggs


1 cup sugar


3/4 can pumpkin


1 tsp lemon juice


1 tsp ginger


1/2 tsp salt


1/2 tsp nutmeg


2 tsp cinnamon


1 tsp baking powder


1 cup chopped pecans

Beat eggs for 5 minutes on high


Add sugar, pumpkin, and lemon juice.


In another bowl sift all dry ingredients and add to pumpkin
mixture.


Grease and flour a 16x11 jelly roll pan or cookie sheet.


Pour batter and sprinkle pecans on top.


Bake 15 minutes at 375 degrees.


While hot, flip onto towel sprinkled with powdered sugar. (This is
the FUN part!)


Roll with towel and cool for 3 hours.

Filling:


6 oz. cream cheese


4 Tbsp. butter


1 cup powdered sugar


1/2 tsp vanilla


Mix until fluffy. Unroll cake and spread the filling over
it, roll back up and refrigerate.


If the cake breaks when you flip it out - dont worry, just
patch it together and roll it up and cool it.


When you unroll it you can spackle up the cracks with the filling
and roll it back up.

I thoroughly enjoyed reading that! Wish I thought of something like that.
